Anatolian Cuisine | Easy Anatolian Meals You Can Cook At Home

  • Zerfet

First, you should knead 3.5 kilograms of flour, 1 liter of milk, water, 2 glasses of vegetable oil and 1.5 tablespoons of salt until you get a medium-hard dough. Leave the dough to rest for 10 minutes. After resting, spread the dough on the tray and put it in the oven until the top of the dough is browned. For the sauce, dilute 1 kilogram of yogurt to the consistency of buttermilk. However, do not be too fluid. You can also make your yoghurt sauce with garlic. Meanwhile, melt the margarine and butter in a pot. After the dough is baked, remove the inside of the dough. Set aside the dough pieces you took out and put them back in the shape of a hill.   • Küncülü Meatball

We recommend that you start by preparing the filling first. Roast 2 tablespoons of sesame seeds and crush them. Finely cut 4 onions and add 250 grams of minced meat to the pot. Add some oil to the pot. Fry the ground beef thoroughly until it absorbs and add salt and pepper to the ground beef. Add the walnuts and roasted sesame seeds to the pot. Then wait for the mixture to cool. While the mixture is cooling, add 1 cup of hot water over 2 cups of fine bulgur. Wait about 10 minutes. In this way, the bulgur will be swollen. Then add 2 teaspoons of salt and 1 cup of flour and start kneading.

After kneading a little, add 1 egg and continue to knead. You will get a soft dough. Take pieces from the dough so that they are not too big and thick and roll them. Put a spoonful of the cooled minced meat into each dough you roll and roll it again. Boil the water in which you add salt in a separate pot and boil the round balls you have prepared for 5 minutes. Then separate the meatballs from the water by straining them. After 5 minutes, one of the Anatolian delicacies will be ready in your kitchen. If you wish, you can also pour hot butter on the meatballs.

  • Şiveydiz

Add half a kilo of lamb cubes in 1 liter of boiled water and boil in a pressure cooker. While the lamb is boiled, peel and wash 6 bunches of green garlic in one layer. Since you will only use the white roots of the garlic, cut these sections to pinkie lengths. Take the boiled meats in another pot and add the garlic and 2 cups of boiled chickpeas. Add water not over the top of the food and boil the garlic for 10 minutes. Meanwhile, mix 4 tablespoons of yogurt and 1 egg with a blender. Pour the yogurt slowly over the dish. After the yogurt has been poured completely, continue stirring a little more. Then stir the food from time to time. When the water boils, boil it for 5 more minutes.   • Alluciye

Roast 400 grams of beef in a saucepan. Add 1 tablespoon of olive oil and finely cut onion and mix. Then add 3 finely chopped spring onions. Pour the finely chopped zucchini and half a glass of water into the pot. After the water boils, add the parsley to the pot and turn off the stove. After waiting for a while, you can serve it.

  • Siron

Wrap the wafer in rolls and cut them so that they are not too thick. Its dimensions can be 2 or 3 centimeters each. Place the cut pieces on a round and greased baking tray without any gaps. Prepare garlic yogurt, add some salt and mix it. Meanwhile, melt the butter. Slowly pour the melted butter over the wafers. After, pour the garlic yogurt on the wafers and spread. Bake in an oven preheated to 180 degrees for 20 minutes.

  • Pırtımpırt

Wash 500 grams of chopped and dried vine leaves and wait for the juice to drain. Meanwhile, cook 1 kilo of chopped meat in the pressure cooker. Fry the 2 large onions in oil until they turn pink. Add 3 tablespoons of tomato paste to the roasted onions. Add the pieces of meat you cooked after the tomato paste. After adding the drained grape leaves, pour half a glass of chickpeas, beans and wheat into the pressure cooker. Add some hot water, salt and the spices you want and cook on low heat for 30 minutes.
